The 2019 Holden Colorado carries a braked towing capacity of up to 3500 Kg, but check to ensure this applies to the configuration you're considering.
This is not an uncommon problem with the head unit in a lot of makes and models. Like any other computer-driven piece of equipment, they have a finite lifespan and, once they’re done, they’re usually done for good. That’s why the dealer would be recommending to replace the unit rather than tyring to fix the one you have.
What a lot of people do is that this opportunity to upgrade to a newer, better head unit with better sound, better connectivity and more up to date apps. There’s loads of choice in the aftermarket and you can spend as little or as much as you want. Many owners also use this as a chance to upgrade speakers and perhaps add a sub-woofer or extra amplifier for much better sound. And you’re right; if the original unit died, a replacement of the same type may well have the same problems.

Many cars will give a beep if they think the car has been locked with a door, bonnet, boot or window open, even slightly. But if you’re checked all that and everything is secure, the first thing to try is to reset the car’s body computer. The first way to try is to hold the lock button down on the remote for about 30 seconds. Sometimes this will force a reset.
If that doesn’t work, disconnect the car’s battery overnight and reconnect it next morning. You will have to rest your clock and radio station presets, but this will sometimes restore the computer to its factory settings. If none of that works, you may have a dud micro switch that’s giving the computer bad information, or the body computer itself may be on the way out.

There could be a complex, electronic, fuel-supply or engine-management reason for this, and if that's the case, having the vehicle scanned would be a good place to start. Or, it could be a case of human behaviour that is skewing your fuel economy figures.
By which, I mean that when you got the car brand-new, you gave it the kid-gloves treatment, understanding that the brand-new engine needed to be run in and would appreciate a slightly easier start to life. Then, as the novelty wore off and the vehicle began to earn its living, you subconsciously grew a heavier right foot. And it is this that's seen the fuel consumption creep up.
Failing that, you might have an on-board computer that has been silently recalibrating itself, perhaps in conjunction with software updates at the dealership which you may, or may not have, been made aware by the dealer.
