Sounds like your clutch is slipping, possibly from being asked to start off in a higher gear for the past five years.
If as I suspect the fan is not working on positions ‘one’, ‘two’ and ‘three’, but is working on ‘four’ it’s likely to be the power resistor module and the only one you can use is the genuine Nissan part. If it’s not working on any fan speed position it’s possibly a fuse, or the fan motor itself.
First, have it assessed by a paint specialist, like Graeme Cuthbert (0422 444 335), and get a report on the likely cause. Then take that to Nissan with your claim, if that fails consult the consumer affairs people in your state.
It would seem you have a number of valid concerns about the car. Write a letter to your dealer detailing the problems you have experienced with the car and your disappointment, and request a meeting with them and a Nissan representative so you can express your concerns face to face and thrash out a program of work to fix the car.
It can happen if someone overtightens the sump plug. The thread can be damaged and distorted, but the usual way of fixing it is to use an oversize plug as has been used on your car. The thread can sometimes be retapped to repair it as well. Replacing the sump seems overkill. If it's not leaking and the oversize plug can be unscrewed and retightened without any problem then I would leave it.
The Patrol six is known to crack heads and blow head gaskets when running on gas because of the higher temperature when on LPG, but it’s rare for it to happen on petrol. Still, I would be running a leak test to determine if there is a problem with the head or head gasket.
It seems to be temperature related, and sounds like an engine sensor is playing up, it could be a connection that's faulty. Have a mechanic, preferably a Nissan specialist check the sensors and their connections.
I'm not aware of any affordable equipment you could purchase to diagnose problems at home. If you want to save money you could use an independent service agent who would generally charge much less than the dealer.
The burning small could be from a hot engine. Check the cooling system and make sure it has coolant; I wouldn’t expect to be able to remove the radiator cap as easily as you say you can after running the car for some time. The fact that the temperature gauge is saying all is well doesn’t mean it is.
