No, you should keep going back to the Holden dealer and demand that they fix it. Your previous visits and any checks and repairs would be on record, so they are not starting from scratch, as another repairer would have to do. If you don't think you are getting good service, and I don't you are, escalate your complaint to Holden's customer service department.

No. It ran perfectly for five or six years before giving trouble, so I don't think you can blame Holden. Has the coolant been changed in the time since it left the factory, has it been overheated at any time, they're questions I would want answered before trying to find someone to blame.
I'm not aware that Holden has said there is a fault with the engine that causes the high oil consumption; the reaction from dealers is usually the one you got, i.e., to monitor it. Ask the dealer to monitor it themselves and if their results show high oil consumption it's much easier for you to request remedial action. I don't believe there is any difference with the VF.

The 5w-30 is often used and is ok as an alternative to the factory recommended oil.
Without driving your car it's hard to make a comment, but I would suggest you find other cars of the same specification and drive them. That way you'll know if it is "normal". You could also take it to a transmission specialist for an independent assessment.
It could well be a valve lifter that's draining while the car is standing and the engine not running. It might be a case of establishing which lifter is at fault and replacing it, but you need an experienced mechanic to listen to it to determine where it is coming from. If it only happens when the engine is started from cold it might be necessary to leave the car with the dealer overnight.
